Disabling video and disabling audio through methods Publisher.publishAudio and Publisher.publishVideo only disable the required media stream track at the client level. That is: the client wil start sending black video and silence instead of the camera and the microphone input. This is the default way WebRTC manages disabling video and audio. But some data is still sent, but far fewer bytes per second. The other alternative would be to completely destroy the connection and build a new one with audio only or video only, but that is much more expensive in terms of CPU and time.
