Would it be possible to generate two recordings of the same session? One would be audio + video, the second audio only?

No, sessions can only be recorded once at a time. It is possible to start and stop multiple recordings during the same session, but not concurrently at the same time.
But if your concern is getting one recording with auido+video and other audio only, then it is as easy as recording audio+video and then getting an audio file from the generated audio+video file.
