we currently have version 12.2 installed on Ubuntu server but we would like to install the version 15.5.
It would appear not to be available on Ubuntu server but only on Docker.
Someone could confirm it?

What? Are you talking about OpenVidu 2.12.0 right? 12.2 does not exists.
We decided to use Docker because it is easier for people to deploy and for us to ensure the right functioning for everyone wanting to install it. You can install Docker in Ubuntu and install OpenVidu easily. Check this: OpenVidu Docs

Yes correct sorry, version 2.12 is actual version installed on production on Ubuntu server without Docker.
We would install OpenVidu version 2.15 with the same platform(Ubuntu server) without Docker; Possible?

No, ther is no longer official support for OpenVidu production deployments without Docker.
You can try replicating the 2.12.0 instructions with newer versions, but bare in mind that problems could arise and we won’t help you solve them. The only official way to deploy OpenVidu now is using containers.
Any reason you don’t want to use them? They extremely simplify the installation and administration operations.
