Is Docker essential?

I want to ask whether docker is essential or not?
If I do not have docker, can I just follow the deployment mentioned in the docs to activate the app and server?

Docker is only necessary if you need COMPOSED VIDEO RECORDING. You can learn more about the different types of recording available in OpenVidu here: https://openvidu.io/docs/advanced-features/recording/
