I think you have problems with opened ports. Seems like letsencrypt has some kind of problem generating your certificate and that the connectiion from your browser cannot be established either.

Check that all of the ports stated here (https://docs.openvidu.io/en/2.14.0/deployment/deploying-on-premises/#1-prerequisites) are accessible from the exterior.
